Winter gratitude 2024

As we welcome the first fresh weeks of 2024, I am again grateful for the support of Omakase’s clients throughout Big Sky, Bozeman, and the Yellowstone Club.  When I opened our doors in January, 2023, I knew it would be a year of growth and development for my catering company, but I had no idea Omakase would receive this incredible reception from so many wonderful families across the area. Thanks to those who have believed in me and shared in this journey since Omakase opened in 2023, and also to new customers who have welcomed me into their homes for the first time this year.

My goal as a private chef is to offer my dining clients in Southwest Montana a top-end sushi Omakase experience on par with quality they can find in New York, Las Angeles or San Francisco. I bring decades of experience as a chef to each Omakase meal, selecting seasonal fish from my private purveyor contacts in Japan, flying fresh bluefin tuna, hamachi, and other world class ingredients to Bozeman, and preparing each bite by hand so that each catered event is a one-of-a-kind experience. Recent feedback from Omakase’s clients recognize this effort. For example:

“Jaison is a true talent. His omakase is equally as good as sushi in New York, Los Angeles, and Miami. He flies fresh fish in from Japan and Hawaii and the meats are exceptional. His preparations really enhance the quality of ingredients. He is a genuine pleasure to have cooking in our home while in Big Sky.”-Hillary, client in Big Sky, Montana.

This holiday season I had the privilege of preparing a number of special dinners featuring celebratory fish:

-Wild buri (yellowtail), a wintertime delicacy, served as sashimi with Italian black truffles

-Japaense kinmedai (splendid alfonsino)

-Japanese blue fintuna

-Akamutsu japansese black throat perch

One of my favorite deserts is mochi. Mochi is a food traditionally served to celebrate Japanese New Year, (正月, Shōgatsu) as a symbol of good luck. Mochi is a rice cake that comes in different variations of savory and sweet, though most people know it as a sweet treat served with ice cream.

As the days lengthen and the powder accumulates, I look forward to serving world-class sushi in Montana. Our winter season party dates are booking fast.
