I’ve followed my passion for the Japanese culinary tradition around the US and Japan for over 25 years. Starting my own omakase catering company in my home state of Montana has been a dream of mine since I first backpacked through Japan learning the culture and cuisine. You can learn more about my story here. Now thanks to the support of a growing community of sushi lovers in Big Sky, the dream is a reality.

Why omakase? Omakase means “leave it up to the chef.” In-the-know sushi eaters don’t order from the menu because the Chef knows what’s in season and what has the peak flavor. Omakase takes this idea to the next level. It is the art of matching seasonal ingredients and fish offerings with the mood and taste of the client in a truly bespoke dining experience. Over time, I get to know my repeat customers and build relationships with them that help me serve a truly customized dinner.  

Each bite of sushi begins when fresh fish are flown from the world’s finest purveyors to Montana. Then I cut and prepare the fish using a combination of traditional techniques and modern flavor profiles.  Each omakase dinner is unique, and each bite of an omakase meal is distinct from the last.  Now, with the support of the Big Sky community, I’m able to bring the omakase experience to the intimacy of your home. I promise it will be one you won’t soon forget. 

Spring is a time  of renewal and new beginnings. In Tokyo each year, the cherry blossom festival (hanami) marks the season of rejuvenation. In March and April people throughout the city relish in the warmer days and bright blossoms, which captivate the imagination in parks and boulevards. One of my favorite ingredient to prepare this time of year is wagyu. Japanese Black Cow is the finest beef in the world. The animals are bred for flavor and reared with a high quality of life to produce beef that melts in your mouth like butter. I use only A5 B12 Wagyu. This means that the beef on your plate has been given the highest rated yield (A5) and beef marbeling standard (B12) from the Japanese Meat Grade Association. The beef marbeling standard is based on marbeling, meat color, texture, fat color and quality.  I like to prepare wagyu nigiri style: thinly sliced, torched, with aged soy sauce, sea salt, pickled wasabi and a dash of lemon juice. 

Building a small business from scratch and preparing for Omakase’s first catering season this winter marks a new phase in my career as a Chef. My kitchen, catering van, website, and staff are now ready to serve dinners and parties for small and large groups. With the addition to the van I will be able  to cater off-site at any location you desire.
